There are some fantastic recommendations here but the first thing I'd do is sign up for PS+. It comes with a great library of games including some of the ones mentioned here. They recently added Red Dead Redemption 2, and I believe the entire Horizon series (which are 2 of my favorite games on PS5) are too.

Have not seen Ghost of Tsushima mentioned near enough imo, but it’s all-time top five favorite of mine and one of the most enjoyable action-stealth experiences ever. Director’s Cut edition is usually included with one of the PS+ tiers.

Cyberpunk 2077 plus Phantom Liberty DLC is a must. I was out of gaming for a similar time and having that be one of my first games back was a mindblowing experience.

I've become a huge FromSoftware fanboy since the end of 2021 or so.
With the PS5 I'd recommend getting Demon's Souls and use that experience to determine if you want to venture into the Dark Souls/Bloddborne/Elden Ring rabbit hole.

All 3 Spiderman games and both of the new God of War games are great on the PS5 (either released on or upgraded for the PS5). Spiderman 1 and 3 are 20-30 hours to beat; the middle one is less than 20 and a glorified DLC.. And that's going for most of the side stuff. Each God of War game is 30-40 hours to do most stuff.
Red Dead Redemption 2 is a GOAT. Start with the first one if you've never played it. RDR1 is short compared to 2 but that would be a long back to back playthrough (30 hours for the first one, 60-100 for the second). I would suggest doing a quickplay of the first due to it's age and spend more time in RDR2. RDR1 is a bit old but a good game. RDR2 plays like a PS5 game. You can even throw in GTA5 on PS5 for a beautiful looking remastered game.
Witcher 3 is another GOAT. Best DLCs of any game maybe ever. DLCs are as long as many games and as good or better than the main story. Graphics and gameplay aren't cutting edge any more but hold up very well. You're looking at probably over 100 hours to play through story/DLC and could touch 150-200 if you are going for full completion.

This game is everything Assassin's Creed: Feudal Japan should have been. 30-60 hours depending on how much you want to do. I would spend the time in this game to do all of the main quests/sides.
There are so many other great games. The Batman trilogy is awesome. Horizon Zero Dawn/Forbidden West are unique. The Yakuza series is also different and a lot of fun...very serious story with incredibly wacky and fun side content. NCAA25 will take most of my time starting next week for the foreseeable future.

So much downloading for all these games
Nothing worse than waiting a week or two between firing up the ps5 only to have an hour download awaiting you and then once it’s finished you’re ready for bed or have moved on to something else and then you don’t play it

Bioshock. I still think it's the best game I've ever played.
Bioshock Infinite is great also, but it's hard to top the first Bioshock. I played Bioshock 2 also, but it seems like I was sort of in a hurry to finish it, so it isn't anywhere near as memorable as the other two.
