Dear Facebook,

Was looking for a pellet grill when I opened up a rabbit hole of videos and channels for BBQ and smoking meats. Holy hell it’s like a cult on a massive scale.

It’s aggravating to me because 9 out of 10 guys are WAY over complicating cooking meat.

Now I know there are guys who cook competitively. I get it. You have to set yours apart in some way so you make unique rubs and use different woods and spray it with something or adjust for tenderness, but if you are a regular back yard weekend warrior the difference in most of those variables is so minuscule that nobody is ever going to know. In some cases it seems they don’t even know why they are doing something. Only that they saw another video doing the same thing.

So now there are a billion you tubers ready to open their own restaurants.

I have been BBQing for 25 years just for the fam and I have jacked up more meat over the years trying to do stupid crap that was completely unnecessary.

If you go to a smokehouse or a BBQ joint where they really know what they are doing, they aren’t going at it with algorithms. They keep shite simple. And to be honest, I’ve watched videos of guys that I’m not sure they know what the hell they want it to taste like much less how to make it taste like that.

So my opinion on matters

-buy quality meat
-figure out what temp you want it to be and how long
-season it to your taste

BBQ and smoking meat is dangerously close to following craft beer, beards, and flannel as the new hipster craze.

/end rant

I feel like if you watch an early season or 2 of BBQ pittmasters and buy a Myron Mixon book you'll have a pretty solid foundation

Nah I’m good. I can BBQ well enough. But I learned from experience what I like and I don’t pretend to be turning out competition level food because I watched a few videos and bought a Traeger.

Just FYI, T-Roy Cooks is originally from Baton Rouge. Now in Austin, from where he posts his YT vids. Pleasant entertainment with a familiar accent.

Season meat, I prefer simple salt and pepper, clean burning fire, cook to temp, sauce if you like. It’s really simple, not sure how it became so complicated.

Malcolm Reed from how to bbq right has a pretty good channel

I don’t find he overcomplicates things at all, and he has some interesting combinations I wouldn’t have thought of

He also has How to BBQ right app . It has several good recipes in it. His rubs and sauces are very good and reasonably priced. He is in Hernando Ms just south of Memphis.
