WYEI - Jambalaya on a stick from Austin, TX

I just saw this on “Best Thing I Ever Ate”. It’s a food truck in Austin, TX called Baton Creole.

It’s $11, and yes, they use tomatoes in their jambalaya.

The jambalaya is actually meatless. They skewer the andouille (or tofu) on to the stick, that add the tomato jambalaya rice around it, batter and fry.

I just saw on their website, you can substitute tofu for the andouille sausage. fricking Austin

I've had food from there and I honestly don't remember if it was any good...so it must not have been that good. They were (and I think still are) located in the back of Shangri La. Like someone else mentioned...it was overpriced. I wasn't about to spend $15 for a forgettable bowl (more like a cup) of gumbo.

The only legit cajun food I've had in Austin is from Evangeline Cafe or Stuffed.

I would think casing it like boudin would be a more effective way to execute that.

At a fair, sure. Outside of that, no.

I’ve made jambalaya balls with leftover jambalaya - chop the jambalaya meat up well and fry balls like boudin balls. I like the idea of a sausage on the stick surrounded by the rice, just gotta make it taste good. It’s a good novelty, but not a regular menu item.

My neighbor (who is a chef), likes to experiment with crazy ideas all the time (and I get to taste them all).
He once made red beans & rice corndogs. It was quite good. He made a remoulade dipping sauce

Cajun Skillet in Cedar Park is legit and might be my fav LA-based option here. Crew is from NOLA and even close when they go back home.

French Quarter off 35 / Parmer is also really good.

I second what another poster said about Stuffed as being a viable option in Austin area.
