I'm a cajun from S La. and grew up on gumbo. I make it a lot. But up here in Shreveport I've had some awful gumbo by non-cajuns who were trying to impress me.

Some examples...

a. gumbo with NO roux. Kind of like soup.
b. gumbo with tomatoes.
c. instead of chicken and sausage, one guy made chicken and weiner gumbo.

Anybody got some stories on bad gumbo?

Why would you call it gumbo?

That's too easy for a witty reply.

I've been known to toss a couple of spoonfuls of Rotel in mine. You'd never really discern there are tomatoes in the gumbo.

Eh, not really a mistake, just the creole style of gumbo. I prefer cajun gumbo, personally.

Burnt Roux..

Too thin or too thick.. IMO Gumbo should not sit on top of rice..

But the worst I have EVER seen was it being served on Top Chef TWICE (two diff chefs) over grits!

went to a nice restaurant in Buffalo, NY

they had "louisiana creole gumbo" on the menu. So I order a cup and they brought me a cup of some sort of brown tomato soup with pieces of chicken and sausage in it. Was easily the worst soup I have ever had in any setting

Oh yea once when skiing in Jackson Hole at one of the restaurants on the mountain the soup special was Gumbo.. I asked them if they really used a roux.. He said nah they just empty it out of a bag and add water!

Weiners only belong on hot dogs

They have no place anywhere else ever IMO

I had this gf a long time ago that made me weiner spaghetti once for my birthday (I took her to Ruth's Chris for her birthday on what little money I had from waiting tables)

Needless to say she was history shortly thereafter
