Folks I know In Oakdale, Ville Platte, Mamou, etc., put whole boiled eggs in their gumbo. I had never seen that before, but I just can't make myself like it. (No disrespect to the folks in those places - love those guys)

no okra in it... gumbo is supposed to okra in it... it is the rule not the exception

Creole styled gumbo is not my favorite. I prefer mine with a dark roux and the kitchen sink added...okra, the trinity if you know what I mean, good cajun style sausage, seafood, and a lot of old school cajun spices. Oh yeah by the way, Shreveport is East Texas.

this most be a north louisiana thing. my wife lived in grant parish during her high school years and she said people their would use tomatoe paste instead of roux.

I've had this. I don't do it when I make the Gumbo, but I've had it. Not bad actually. It is my understanding that the origin of this is that in the before times, the Po folks who didn't have money to buy potoatos...I DID say "po" folks...would put boiled eggs in the gumbo to make up for not having potato salad.

This is true...for Creole Gumbo. Not true for Cajun Gumbo which only has okra in it if it is okra Gumbo.

iv had it with the boiled eggs in it.. it actually isnt half bad i wouldnt put it in mine but i enjoyed it the times i did have it

Had a native Texan ask me for my gumbo recipe, so I typed it out in detail for him. A couple of weeks later, he comes by and says the gumbo came out like crap. Nobody liked it. I asked him how it could be THAT bad if he followed my directions. He said he followed them to a 't'. I said "tell me what you did, start to finish." He said "Well, first I FRIED the chicken." ......I responded "Houston, we have a problem."

We do this sometimes, but only in chicken & sausage gumbo. Never in seafood gumbo!

Years ago I tried a cup of gumbo from a restaurant in Pensacola (I know, but I was young and stupid). I'm pretty sure that it was made with a chili powder base

paul prudhomme's recipe actually calls for frying the chicken first and his gumbo is some of the best i have tasted
