Imagine how much peanut butter you'd need for the roux

The Gumbo will be BIG, really big...5000 POUNDS, 2 ½ tons of gumbo and that is not even counting the rice! There will be an additional 2 ½ tons of rice...We are talking HUGE! This event will be sanctioned by the Guinness Book of World Records and a Guinness Adjudicator will be onsite to announce a NEW WORLD RECORD has been set and brought home to Louisiana.

Do you have experience cooking really big batches? I don't. I just converted pounds into gallons using the weight of water. A gallon weighs 8.345404 pounds.

Here's a recipe about 1/2 that size for chicken and sausage gumbo with oysters:

Here's a recipe from the Mobile Gumbo Fest:

WORLD'S LARGEST LA SEAFOOD GUMBO - MARCH 2015

LA Seafood Ingredients:

750 pounds (70-90 count) shrimp, peeled and deveined
450 pounds catfish fillets
100 pounds claw crabmeat
50 pounds white crabmeat
200 pounds diced alligator meat
25 pounds Louisiana crawfish tails
85 pounds oysters

Additional Gumbo Ingredients:

78 pounds vegetable oil
80 pounds flour
200 pounds diced onions
75 pounds diced celery
100 pounds diced green bell peppers
50 pounds minced garlic
100 pounds sausage
150 pounds sliced okra
1,650 pounds hot shellfish stock
20 pounds sliced green onions
10 pounds chopped parsley
salt and cayenne pepper to taste
Baumhower's hot sauce to taste

(If my math is right, this is 4,173 lbs.)

Method:

In the kettle, heat oil over medium-high heat. Mix in flour, stirring constantly until a brown roux is achieved. Add onions, celery, bell peppers and minced garlic. Cook until vegetables are wilted. Blend in sausage and stir to mix well. Stir in okra then add hot shellfish stock, one gallon at a time, stirring constantly to incorporate. Bring mixture to a low boil, reduce heat and allow to simmer. Additional stock may be used to retain volume. Add green onions and parsley. Season to taste using salt, cayenne pepper and Baumhower's hot sauce. Fold in all seafood, return to a low boil and cook until heated through. Adjust seasonings if necessary.

Looks good but 10 barrels of gumbo is too much for my game day party. Can you size that down to 1.5 gallons please?

Powdered roux. It's a superior way.

Here's a video from the 2010 "Gumbo Bowl" in conjunction with the "Game of the Century":

Note they used a premade gumbo base consisting of roux and water.
