Steaks are expensive. It makes no sense to order a nice cut of beef, then tell the kitchen to cook the juice and flavor out of it.

If you want charred, dry beef (and nothing else), scorch yourself up some jerky in a hot pan and save $40.

Your waiter should not have scorned you - that's bad service. But the rest of us are under no such obligation.

I think that's a bit presumptive. I've never seen that as an issue. Hot pink center running with juices is what I'm finding with a slightly charred outer. And as previously mentioned, the NY Strip has the best flavor of them all. Of course, that's one man's opinion.

The first time I went to my in laws for a cookout (western NY) I watched in horror while my wife's Uncle Junior grilled some beautiful looking rib eyes. He cooked most of them for probably 20 minutes.

I hadn't been in the family long enough to ask him "da fuq yo doin wit dat meat!" I managed to rescue a steak that had been on the grill for just a few minutes, flipped it while he was not looking and pulled it for a nice medium rare, which was the best I could do considering the circumstances.

Naturally, mine was a little cool when we sat down to eat and I heard generally two things. "How can you eat that bloody meat" and complaints of how tough their steaks were and it must be the butcher's fault.

My MIL and FIL used to order her steaks WELL done whenever we would go to a restaurant. At my house, I would cook them medium. They used to love my steaks. They would even insist that I man the grill when I was visiting and they were grilling steaks for us. They thought my steaks tasted great IN SPITE of the fact that they were "undercooked", not because of it. They never could bring themselves to not order a steak well-done in a restaurant.

ETA: I only cooked their steaks medium. The rest of us got MR.

Nor is all the juice cooked out of the well done piece.

It seems to me that based on that picture, most people have never had a properly cooked well done steak, but just go by what their parents or such did, which was truly cook the juices out of it.

That rare one looks so good.

Steak is one of those things like crossfit; if you like it medium or rare, that person is sure to let you know without you even asking.

Like OMG you're such a foodie! You eat your steak how it should be eaten!
