Why do restaurants serve tail on shrimp in pastas, sauces and soups?

I'm fine with tail on shrimp fried or in a cocktail when I'm using them as a grip, for finger food.
I love shrimp so I often get the shrimp entree if there is the option.
Often the shrimp has tails on it and I either have to bite the shrimp and waste the tail meat or put my fingers on sauce.
I get it makes it look fresher, but I never worked in a restaurant that didn't thaw and peel their shrimp. It's not fresh. You can take the tails off.
Why do they do this?

I had this happen at a "fancy" Italian place in a Gamberi Diavola. It made it much more difficult to eat. They should 100% remove them.

Some will say "aromatics" but 6 - 10 tiny pieces of shrimp tail shell are not going to impact the flavor of a dish.

They should make homemade shrimp stock with the shells if they want aromatics.

The last time I ordered shrimp fajitas at Superior the shell was still on them. Is this normal over there?

Restaurants leaving shells/tails on shrimp for a pasta dish is stupid.
Never seen this before for a soup, which imo, is even dumber than for pasta.

Either they like the look or that's how they are buying them.
Somebody a long time ago decided that tail-on shrimp look better than tail-off shrimp and it stuck. It doesn't make any damn sense to leave them on in certain applications, but whoever controls the menu is wanting them left on.
You should seriously consider continuing to eat there. The chef is obviously a psychopath.

There's a place in Pawley's Island SC that serves shrimp and grits with unpeeled shrimp. It's good but a train wreck to eat. No bueno

Not really. It takes less time to pinch the tail to remove all the shell instead peeling the shell and leaving the tail on.

They think it makes the dish look more appealing to the eye and, perhaps, because the shrimp look bigger. I agree it's fine if the preparation is such that I'll be eating the shrimp with my fingers. Otherwise, it's a PITA and you have to get your hands dirty to take them off if you want to eat the tail meat. I always want to eat the sweet tender tail meat, so I don't like it when they leave the tail in the shell.

I don't mind it in certain dishes. What freaked my wife out one time was when we were eating at a place that left the heads on as well. I just cracked them off, peeled them and went to town.

Some Asian places do it, and I think some of their customers eat the tails.
Once I discover that I have to remove the tails from small shrimp myself, I’ll order that dish in the future with less expensive and easier to eat chicken.
