You are right - I ended up splitting between two pans. Just in the oven making the gravy slop Hate to discard it all. I’m thinking I might make stock from it.

Shrimp looking good!



Cabbage casserole just started. Another hour on it, then moving on to sweet potato casserole and crab cakes.

Cornbread dressing is made. Rice dressing meat mixture is cooked, will add rice tomorrow. Cranberry sauce is made. Two pounds of cheese is grated for the mac and cheese. Can’t decide if I’m making the pumpkin pie next or the mac n cheese. Turkey gravy is in progress.

Yes, I did put jalapeños. Didn’t add pecans. I think it’s tasty!

Your gravy is further along than mine. Looks great!

I’ll do the dressing in the morning, and I’ll smoke two turkeys overnight. Baked the ham this afternoon.

Mac and cheese is ready for the oven tomorrow. I will be interested to see if my son questions the mac and cheese because I strayed from tradition and used cheddar, gruyere and smoked Gouda.

Been cooking since Monday.

4 gallons chicken/sausage/okra gumbo
Large pan of mac & cheese
Large pan of eggplant/shrimp/cheese casserole
Large pan of cornbread dressing
Giblet gravy
3 loaves of homemade herb/cheese bread

Cooking tomorrow includes:

4 Fried turkeys
Roasted garlic mashed potatoes
Basmati Rice

I have 30 people who are coming by for the big meal.

Happy Thanksgiving to you folks and have a great day with family and friends.

I just got done measuring where the oil level needs to be in the pot and injecting the bird while watching the SNL special. I hate the weekly show, but the Thanksgiving and Christmas holiday specials are traditions.

I finally get to cook Thanksgiving dinner for all and I got a lot of stuff done tonight, most dishes just need to go in the oven for a bit tomorrow:

Spinach madeleine (done)
Sous Vide carrots (done)
Mac n Cheese (done)
Mashed Potatoes (peeled tonight, cook tomorrow)
Oyster Dressing. (Tomorrow)
Green Bean Casserole. (Done)
Collard greens (done)
Creamed corn (done)
Roasted Cauliflower (soaking for tomorrow)
Roasted Brussels Sprouts (tomorrow)
Turkey & Gravy. (Dry brine tonight, spatchcock Tom)
Ham (bought)

Others are bringing:
Sweet potato nonsense
Cranberry nonsense
Cornbread dressing
Rolls
Desserts

The wife 'called' Thanksgiving this year so I'll just be her chopping/shredding/cutting bitch for the day. I also insisted on making dessert so I'm making pecan pie. Yeah, pretty exciting and adventurous.




I do get to cook Christmas dinner, though....so it's not all bad.
