If not roasting in the oven until they brown makes a richer, darker heartier gravy. So many forget or skip that step.

Yep. Roasted the chicken wings and giblets with whole heads of garlic, red onion, a little ginger, torn mushrooms, etc for 80 total minutes.
Here is after 40.
The fond at the bottom was a solid 1/4 inch all the way across both pans before scraping it up. It tastes incredible.

I made a batch of dough for homemade rolls and first rise is done. Getting ready to make the rolls and let them rise again.
Time for a good bloody Mary now!
