I've never eaten at Cochon. I've enjoyed Butcher a number of times, but I bought some andouille from there that was downright awful. I posted about it some years ago and recall another poster had the same experience. It had a very strange unappealing flavor.

Nola is not known for boudin. Best stop at Rouses is your best shot. I prefer the smoked boudin.

Pretty sure you don't know all the facts. Cochon didn't fail in Lafayette because of the poor food quality or taste. The menu consisted of old Cajun-style meals that your grandma would cook on Sundays ... smothered rabbit, roasted chicken, braised pork shoulder, ribeye roast, shrimp in a butter sauce, collard greens and tasso, wild grain dirty rice, etc. It didn't succeed because the locals were not gonna pay $21.95 for a smothered rabbit entree' since you could get the same plate lunch at T-Coons or Dwyer's for $9.95 and a larger serving. Link was trying to sell Cajun food to Cajuns who cook the same meals at home at a fraction of the cost. That restaurant model works in New Orleans because of the tourists and locals who want to eat Cajun style meals (i.e. K-Paul's RIP ) Cochon's boudin was decent and edible; however, at the time (2011) you could buy better boudin in Lafayette at a hundred different places for $1 per link.

Instead of trying to navigate all the NOLA boudin deficiencies, as others have suggested, find a Rouses and pick up some Best Stop smoked boudin. Best Stop is based out of Scott, LA (I-10 Exit 97 - you'll be wise to remember that exit).

IMO, it's not as good as say Kartchner's or Billy's, but not far behind. I'll just leave it at that so the headlines in Gaza tomorrow don't read "South LA boudin battles resume.'

I asked how much a lb. and the guy behind the counter said they usually sold it by the quarter pound and it was $7.50----------so I'm quick with the math and that worked out to $30 a lb. which was insanely priced.

Then she asked about beef hot tamales and the guy said they were out but we could put some on hold in the next shipment so we did that for 3 dozen.

Two days later I get a call that they are in and I go to get them and that bill came to $53 since they sell them not by the dozen, but by the pound and some packages are bigger than others. Worked out to almost $17 a dozen plus tax.

Haven't bought them since.

If you haven't tried Boudin by Jamison, you're missing is out. His is the best around and it's not even close. Check him out on FB to order for Thursday pickups or he does some markets on the weekend.

As someone mentioned he's won the people's choice a couple times now at the boudin festival out in prime boudin country.

I've had his boudin and I agree, it's very good. Especially if you put it on a grill for a bit.
