Thanks. I am willing to schedule a short vacation to get this done. I have expanded my BBQ into brisket lately, but need a good foundation on what it is supposed to taste like. Figured central Texas would be where I go.

Aaron Franklin was asked where he goes for Brisket. He answered "Valentina's. I took his word for it and brought a coworker from Boston. We about OD'd. The Brisket was awesome and the Beef Rib may have been one of the top 5 things I've ever eaten. Flat out sexual.

I've been to Franklin's and Valentina's is very close. If you're traveling to Austin, and want to really get authentic, you should probably go out to Lockhart and eat at Kreutz and/or Smitty's. That's where it all started.

Thanks. I always hated brisket because it was so dry. But then I got a hold of some that I think was cooked right, and now I am hooked. I could eat my body weight in the stuff. That beef rib sounds amazing.

For me, it's Smitty's in Lockhart. Pecan Lodge second.

I refuse to wait in that long arse Franklin's line.

Pinkerton's, Pit Room, & Gatlins all have excellent brisket in Houston. Pinkertons uses Creekstone as their meat supplier, I recommend hitting them while you are searching.

FTR, had Mueller's in Taylor, TX (3/17) and The Pit Room, Houston, TX (10/16) and was disappointed in both.
