When eating Boudin, do you suck the stuffing out the casing or eat the casing?

I heat up the boudin in the casing and slice it in bite size pieces, top it with a bit of Creole Mustard and eat it casing and all.
My wife heats it up, removes the stuffing and tosses the casing.
I make my own boudin and use natural casing to make the links.

Ever since I accidentally made eye contact with one of my podnuhs while squeezing it into my mouth I've been putting the link on a plate and eating it with a fork and knife.

On a related note, anyone ever had the deep fried boudin from the gas stations in Natchitoches or Many? It's pretty damn tasty.

Depends on the quality of casing. A good casing, even if steamed, should break apart when you bit into it. I will not eat the thick and chewy casing if steamed.
Baked / Grilled and brushed with olive oil until the skin is crisp is the way to go though.
