Mine is jambalaya. I cook this more often then any other meal like once every couple of weeks.

My wife would say my lasagna, but my personal favorite thing I cook is crawfish stew. Love a good crawfish stew with fried fish.

Shrimp in a Boursin cream sauce. It used to be fried chicken but it’s too much of a hassle to make.

As simple as both are, shrimp scampi and pot roast. I have yet gone to a restaurant that has a better pot roast than me. I will give a select few on having better scampi than me but not many.

Some inbred, mutated version of Louisiana courtbouillon and French bouillabaisse.

My wife calls it "fish stew". It shares common ingredients between the two (fish, shellfish & seafood broth, tomatoes) and has some characteristics of courtbouillon (trinity, garlic, Cajun & Creole spices) and bouillabaisse (saffron, fennel). I deglaze with Herbsaint and Brandy too.

What I cook most often? Shrimp Scampi, it’s fast and easy for a weeknight dinner.

What do I think I cook better than most that my family really enjoys? Beignets, waking up to Café Du Monde on Sunday morning without leaving the house is very appreciated.

Shrimp Roban, using Semolina's recipe, with a slight tweak.

I make great baked potato soup as well. And I use Cajun Ninja's recipe for hamburger steak and pot roast. Both are delicious. Every time.

Lastly, I can do chicken scallopini very well. It was one of my wife's favorite dishes. But she left, so maybe it wasn't that good.

Pan seared duck with blackberry reduction sauce. I know it's more than one dish. But I have many.

Simple catfish over real grits and shrimp

I here my ribs are pretty good with my Havarti with con buco pasta mac and cheese.

Brisket

Blackened chicken/shrimp alfredo
Crawfish etouffee
Chicken and tasso fricassee

At least that's what the family is always requesting I cook, and the neighbors seem to enjoy the most as well. Personally, I think I also do a pretty damn good round steak rice & gravy.

Brisket with burnt ends. Not my favorite, but it’s everyone else’s. It’s kind of an event.
