What’s your go to gumbo pot?

Right now I have a 7 qt Tramontina enameled cast iron pot. It gets the job done for now. I eventually want to get a Staub to match my wife’s (no pics) bakeware. Obviously La Creuset is nice as well.

Anyone cook gumbo (roux, trinity, and stock) directly in a black cast iron pot? I don’t put tomatoes in my gumbo, but is there any truth to the rumor tomatoes will harm cast iron?

I use a 5.75 qt Staub and cook everything except the meats in it. I know it's a bit on the small side but I'm not cooking for a whole big family.

I've got 3 depending on how much I need to cook and sometimes I'm using all 3.

I've got an 8 qt. for making it for the house and I've got one pot 12 qt. and another 16 qt. and will use them when needing to feed a big group of folks.

To address tomatoes in cast iron. It won't harm it, but if using too much tomato product the end result will have an off taste if cooked in uncoated cast iron. I find it almost has a "rust" taste if that makes sense.

I switch from my 7qt enameled and black cast iron pot. I’m happier with how my roux turns out in my black cast iron pot.

8 qt All Clad LTD that I got from Marshall's at half price for $100 because someone dropped it and caused a minor scratch and dent. Most versatile pot I own.

I make my roux in my McWare Dutch Oven and the gumbo in my 10qt McWare. My mother just gave me her 4 gallon commercial grade pot for the big jobs.

13 gt Staub and a 9 qt LeCreuset.

I wanted the 15.5 gt LeCreuset Goose pot but since I have the Big Staub I cant pull the trigger on $650.00

And I have a couple old cast iron 10 or so quarts I’ll use sometime or at least make roux in them.

I have a large cast iron pot with a lid I got from academy. I think it was sold with a propane burner that’s since bit the dust. But it’s my go to gumbo, jamb, soup, chili pot. Have not had issue with tomatoes in the chili.

You won’t have issues with tomatoes in your gumbo either.
