Room temp, coarse S&P, grill as hot as you can get it.

ETA: mix pressed garlic with butter, top steak when done cooking

I said goodbye to a grill about a month ago, as it had broken down beyond repair. I plan on purchasing a new one this spring, when they tend to be a lot of deals about.

In meantime, what's a good way for cooking them indoors. I've tried broiling them but I'm not a huge fan. Is there a good way to cook them on top of the stove?

If you have an oven and skillet, reverse sear.

cast iron
oil in pan
heat til it starts to smoke
put steak in and flip every 30 seconds
do this for a few minutes depending on size of steak
pull from pan
add a bunch of butter and let melt
add steak back in and baste the steak with the butter for 30 seconds on each side
pull and let rest for 5-10 minutes
eat

I do something similar, but add a little garlic and Worcestershire to the butter.

My favorite cut is a sirloin, about an inch thick. Sprinkle with McCormick's Montreal Steak Seasoning at least a half hour or so before you want to cook.

Right before cooking, pat the surface dry with paper towels. If I'm cooking in a pan, I make sure to knock off the particles of seasoning, otherwise I find they burn in the pan. For the grill, I don't bother to knock them off.

I get the fire as hot as I can and flip the meat every 60 - 90 seconds or so when I'm grilling. In a pan, I'll let each side go longer because the temp isn't as hot.

I judge doneness by the feel of the meat and let the steak rest at least 7 minutes before cutting.

Put in ziplock bag
Fill bathtub with warm water
Let steak in bag sit in water for 18 hours
Perfect medium rare

I've been doing the sous vide thing for a while. I like it with steaks. Just have to be home ahead of time for that type of prep.

I usually do grass fed ribeyes to med rare temp, then sear in a cast iron grill pan.

I saw HEB had a massive thick tomahawk ribeye the last time I went in. I'll probably try one of those soon.

I've also been doing sous vide recently. Cooking to about 133 or so and then searing in a cast iron pan. I like with sous vide that I don't have to take it out at a certain time, it cooks to the temperature set so if we need to eat later than first expecting the steak doesn't overcook.

But prep? More salt and less pepper.
