what would you like to see on a menu in BR?

if you could plan a menu for a new casual joint, what would be on it? BR has plenty of burger & wing places, but where are the gaps for a quick, casual mid-priced meal?

my first thought is gourmet sandwiches and homemade soups, with some simple but interesting protein-centered entree plates and maybe noodles

what you got?

agree but unless the building is paid for its almost impossible (as chef rob will attest) to make money. to do it right means you cant stay open all night for dinner. open "till we run out" doesnt cut it when you have overhead

A restaurant that specializes in lechon would kill here. Throw in some adobo and pancit, I would drive to BR for that.

A good crawfish bisque with stuffed heads or, at least, boulettes.

Makes me miss AYCE Couchon de Lait on occasional Fridays at the City Pork deli before they closed that location.

If Baton Rouge gets another Mexican joint it's gonna need a wall around it.

Anyone remember Luther's Pit Barbecue? Fast Eddie owned the one in BR. I was a kid, but I loved it.

I love curds. Maybe on a charcuterie board with some smoky sausages.

I agree—a whole roasted pig joint would be awesome.

problem with whole pig is the fire marshal
you’d have to do it outside and you’d need to be able to roast several at a time

so you need a stand-alone building with a yard and you have the same issue as any other authentic BBQ...how much do you cook and can you stay open thru dinner?
