You can get an electric smoker that can roast up to fourteen at a time.
And the fire marshal would never come into play.

that’s not doing it right
doing it right is over charcoal or wood
whole pig produces an enormous amount of rendered fat also which is problematic inside the building. As a landlord I would not allow that inside my building regardless

it’s part of what I do for a living
the electric smoker is SOP for most volume BBQ places. It’s not what I would use inside for whole hog but you are welcome to your opinion as am I

you are derailing the thread...an exterior smokehouse is not practical in most multi tenant developments
if you’d like to contribute, what would you like to see on a menu?
to the suggestion of babalu I looked at the menu, tapas I think is a good idea for BR.
another idea I had is homemade pastas and other small plates. I think that’s an under served area

Asian Dumplings. Shanghi, Soup, fried or steamed but China town style dumplings. You can't find a decent dumpling in this town and the LSU population would crush them.

The dumplings at Soji are great, but it’s not a dumpling restaurant.
