What to do with rib trimmings

My smoked rib preference is St Louis style. Most of the time, however, the full spare rib plates are on sale cheaper than the prepped St. Louis ribs so I buy those and trim them down. I have always discarded the trimmings but it has always felt like an awful waste of good meat.

What would y’all do with the trimmings?

I was thinking about marinating and searing them into a gravy.

I just throw them on the smoker and snack on them as they are done. Why throw them away?

Grill the trimmings. Snack on some and use some in the baked beans

I don't always cut them St Louis style, but when I do, I definitely smoke them with the rest. Some bits are done quicker than the ribs, so you get interim tasters. Win.

I like the frying idea though.

You could also save it and throw it into your Sunday gravy.

I trim spare ribs before I smoke & smoke it all …. Eat ribs and freeze other trimmings for peas & beans.

Just smoke the whole thing. As others said, there are plenty of things to do with the meat you would normally trim off.

Last time I did spare ribs, I made some Asian style sticky burnt ends with them. Turned out great

I do this with my rib tips after trimming spares. The only thing I don't like about it is having to deal with the cartilage when eating the finished product.

A lot of time I use the trimming when I want to try out a new rub or seasoning. That way if I don’t care for it I didn’t waste a rack of ribs.

My preference is St. Louis Style also. I just smoked two racks of spare ribs last week that I got from Walmart for $1.97 a pound. I thought about cutting, but decided to not.

At Sam's Club the baby backs and spare's are the same price at $2.89 a pound. They want $4.18 for a pre-seasoned racks of St. Louis Style ribs. I will buy baby backs.

A lot of people grind the trimmings and make sausage with it.
