What to do with cooked brisket

Any of you guys have any favorites you like to do with your cooked brisket?

I plan on making a chili today with some leftover brisket, and i'd really like to try to make a potato casserole with it as well.
I've done tacos/quesadillas before.

Any other suggestions?

I chopped mine up and added it to a crock pot of cheese dip I made. Was delicious and added a nice smokey flavor to the dip. Everyone loved it!

yeah i remember the brisket gumbo. Feels like it would just be a smoky soup.

I'm really looking forward to this chili i'm going to make. SHould have a good smoke flavor to it.

1. Just add Tx. stile BBQ sauce in a crock pot and make sandwiches.

2. Mix with cream cheese(look up recipes)and make a Mexican casserole with flour tortillas.

C&S gumbo has smoked sausage in it, often has smoked tasso, and sometimes smoked chicken / turkey.

It tastes like gumbo with more of a beef flavor than poultry.

Freeze it and use some in baked beans next time you smoke something. I usually eat sandwiches for a few days and freeze the rest in 3-4 separate ziploc bags.

It was amazing man. I seriously made a 3/4 full crock pot and had none left. Made that with a ground beef chili and everyone was adding both to fritos.
