What to do with all this deer and wild hog meat

I have this deplorable relative who takes pride in over killing these animals on his hunting land. He then throws all this meat on his relatives during family events. I now have around 100lbs of random deer and hog meat in the deep freezer dating back from 2013. No backstrap since we are his second cousins and not siblings or first cousins. I’ve tried smoking the hog and it’s just not the same as a nice pork shoulder from the grocery and honestly it taste like crap. As for the deer meat, who in the hell enjoys this stuff.

I don't care how it's wrapped, vacuum sealed, etc., if it's from 2013 it goes in the garbage can or is cooked down for dogs to eat. Surely after 6 years that crap has to be freezer burned or at the least, not worth eating.


And you're finding out smoking wild pork is not like smoking store bought pork. It is much leaner and gamier, and if a boar-----NAH.

Deer meat is good, if processed right. If making sausage, you need to mix in a good amount of pork since it is a fatty meat and deer is so lean. Plain deer meat ground up is dry as dust when cooked.

Mix all that shite, with some more pork fat, and make a sausage. Smoke some, keep some out of the casing, and make flavored links like jalapeño and cheddar.

You seem ungrateful and I’m wondering if it’s because of your location in the pecking order. Would he be as deplorable had you been the recipient of the prime cuts?

Regardless...tell this generous relative that you would appreciate he give your portion to the local food bank or St Vincent DePaul in your name.

Then lie on your taxes for charitable contributions and stick it to the man as if you were Daniel Boone himself.

However if you have been hoarding this gracious gift since 2013 you seem slow to come around to the argument or complaint. Ever think that maybe your lot in life is self made?

I don’t share my bounty with second tier relatives so maybe you should thank your lucky stars. Or just keep your mouth shut.

If you’ve got meat from this year or last, and it’s pure ground venison, use it where you would use ground lamb, but bump up the fat content with extra olive oil. I enjoy venison, and I make delicious greek style meatballs out of it,

Look up recipes for “ciinghale”, which is Italian for wild boar. A whole slew of traditional recipes from Tuscany and parts north are devoted to making wild boar taste delicious. It can be wonderful if cooked with thought.

It’s fricking deer meat
When you have to add pork to it just to make a sausage link, it ain’t much of a bounty.
