I'm not talking a meal, but a specific dish or food item.

I was thinking back earlier today and was struggling to come up with an answer.

I think I've settled on a roasted bone marrow dish I had in Brazil.

Boudin is my favorite food item, so I gotta go with that. I think the best I've ever had was from T-Boy's in Mamou. The old Johnson's in Eunice may have been better, but it closed years ago.

Most every dish at OF is a game changer.

For me, it was a Petrale Sole over jasmine rice with chorizo poached in a saffron curry nage at Redd in Napa.

Shame Redd closed since it was our goto when we couldn't get French Laundry reservations.

Louisiana cuisine is hard to beat. A variation of fried green tomato’s or good boiled crawfish or crabs. They’re simple but so damn satisfying.

I could say a bone marrow dish or a beef cheeks sandwich with Russian dressing, but I’ll always come back to the simple food with amazing flavors.
