They're pretty legit, but that's boudin balls, not boudin.

I don't do the seafood links, but Billy's crawfish wraps are very good and I like the crawfish balls a little better. The crawfish pies are also good.

Well, boudin is gluten free, as it has no wheat products. And fine dining restaurant DTB on Oak St in NOLA has a vegetarian boudin ball on its menu....made with smoked mushrooms and eggplant.

C'mon, you grumpy people. DTB (short for Down the Bayou) is fine dining--an arena where creative reinterpretation is the point, not the exception. The folks behind DTB are indeed from DTB. Why is it heretical for a Cajun chef to play around with his/her own food, especially when that food is as flexible and inclusive as Cajun food?

T-Jim’s smoked is my favorite. Their smoked blood boudin is incredible as well

Just looking at T-Jim's website. Looks like my kinda folks.. a Cajun that remained true to his family's techniques and traditions. Would like to stop in and try em out.
