YEP, they’re legit. I used to stay at Paragon in Marksville once or twice a year, and when Shipley Donuts in Bunkie was open, I used to swing by there and get some donuts (best I’ve ever had), then hit Cottonport and go to T-Jim’s. Their head cheese is awesome too. And of course in Marksville it’s all about the pronto pups.

I like mine in the oven in a cast iron pan at about 375 degrees, flipping every 15 minutes until the casing crisps up. I usually preheat the pan with some bacon grease beforehand.

I make a great crawfish boudin and it's all Louisiana tails. We won the boudin cook off in Lafayette this year
