What does squirrel taste like?

I’ve always been curious to try squirrel, either in a stew or fried, but have never had the chance yet. What does the meaf taste like? Also, do any places in South Louisiana sell squirrel, either already cooked or frozen?

Delicious. You can’t buy it in stores because no one has farm raised squirrel. Closest you’ll get in a store is to buy some farm quail. It tastes a bit like that but more gamey.

However, as I understand it, gaminess is not an inherent “flavor” to wild game, rather than a byproduct of processing/handling of the meat after game kill. Beef isn’t gamey because it is butchered immediately after it is killed. Wild game often isn’t butchered and stored cold for a few hours after the kill.

I don’t know how to describe the taste and no it’s illegal to sell it. The way I do them is fry them till about half done then cook them down in gravy and onions the rest of the way, a piece of bread and purple hull peas with it.

I would say, when fried and cooked down, they have a buttery flavor! Squirrels rock and windshieldman is right, browned then smothered in a gravy.... slow cooked n a cast iron pot is money. Served over rice w a biscuit/cornbread & purple hull peas is a winner. Here is a pic from the camp last weekend

A mix between chicken and pork.

I substitute squirrel for chicken all the time in gumbo and most people that have never had squirrel can’t tell the difference.

similar to rabbit. delicious when fried and cooked down in a gravy or in a gumbo or stew.

If you come to my garden I'll give you beer and and an air rifle and you will learn what squirrel tastes like. It reminds me of dark chicken meat.
