What do you add your meatloaf?

Everyone makes their meatloaf different. I'm pretty basic.
Sautéed onions, celery, green peppers
1 egg per pound of ground beef
Ritz crackers
Tomato Sauce
Meatloaf seasoning
Considering fresh thyme, but since I leave the loaf uncovered, it makes it difficult for the flavor to set in.

If you just want a different taste, add
BBQ sauce or Hinds 57 sauce.
You can also add ginger and a little (very small amount of) sesame oil.
You can add ginger and fish sauce to mixture,
Use soy sauce in the mixture
Add some Chow Mein vegetables and soy sauce to the mixture instead of onions and peppers substitute chow mein noodles for the crackers.
or top with duck sauce
or top with plumb sauce
or top with sweet and sour sauce.

Either 1 lb of ground beef & one pound of ground pork or two pounds of a ground beef/pork/veal mix.

Bread crumbs, or if I'm making it low carb, parmesan

I used some Hawaiian rolls soaked in milk last time as a binder. It gave it an awesome hint of sweetness

I've been trying to remember what meatloaf recipe I used the last time I made it which was actually several years ago. I finally found the recipe. It's here:

I remember this being very moist. I didn't use the ketchup/tomato for the top. I used the drippings for a little brown gravy that was very tasty. I have a pork base from Minor's that worked well.
So, what do y'all put on meatloaf sandwiches? Similar to a meatball sandwich/poboy?

Just cold leftover meatloaf and a shite load of mayo
One thing I add to my meatloaf that I don't see in very many recipes is chopped mushrooms

Mom's Meatloaf
1 lb ground beef
1/2 lb sausage
3/4 cup oats
1/4 cup diced onion
1 1/2 t. Salt
1/4 t. pepper
1 cup tomato juice
1 egg, beaten
She just topped with ketchup, but I started making a glaze of ketchup, worcestershire sauce and brown sugar.

onions sweet green pepper, red pepper, green onion- scallop onion, parsley, oregano, Tonys creole, garlic salt, salt, pepper, eggs, touch a milk, bread crumbs.
I then put brown gravy over it, foil it and cook on 275 for 2 hours. Sometimes two fiddy degrees if I want it cooked r e a l slow.

Yep.
My favorite topping is ketchup with a pinch of cinnamon and sweetened up with brown sugar.
I also like to make an impression on the top of the meatloaf so you get a flat top after cooking. It's the same idea as pushing your thumb down into the middle of a burger patty before cooking. It keeps the ketchup mixture from flowing down off the top.

Cheddar cheese. Used to just put in on top, but these days I like to split the loaf and put it in the middle.

I like the Good Eats recipe. Among other ingredients, I like the carrots and red bell peppers that add some sweetness. I also add extra chili powder.

I've done the Good Eats recipe on the smoker, and it was good.
But my all time favorite is Paul Prudhomme’s Cajun Meatloaf with his "Very Hot Cajun Sauce for Beef" on top.
It is a PITA to make, but it is so worth it. Not sure what elevates it. Perhaps the beef/pork combo for starters. It has some zip.
