Mahatma only. Parboiled rice is just wrong for a jambalaya. Try letting all of the liquid cook out then cover.

I like my parboiled rice with a touch of powdered cheese. New Orleans style, of course.

I find this funny too. People claiming that rice has its own flavor much less being able to taste that flavor in a dish containing 5+ lbs of browned onions. Jambalaya takes long enough to do right and sorry but I don't like having to worry about my rice coming out gummy.

well I never worry about my rice coming out gummy, and I never use par-boiled rice in Jamabalaya.

Its not about the flavor of the rice.

Its that Parboiled rice does not allow the flavor of the Jamabalaya to seep into the rice.

Is that because you know it will come out gummy ahead of time? The biggest knock on parboiled rice is that it always comes out gummy.

Our definition of gummy must be different. I've never seen gummy parboiled rice, even when too much liquid is added. It's firmer and doesn't stick like regular rice.

Talking about the individual rice themselves.. Not sticky but gummy.. Its firm individually but when you bite into it there is a wierd gummy texture to it that I dont care for.
