What are your favorite veggie side dishes?

Main squeeze and I love veggies and include a vegetable side in pretty much every meal we make, but I'm a little bored with just roasting or grilling them so I'm looking for some new, exciting suggestions.
Just need to change it up a little.
What do y'all like to cook? Open to everything except for beets (me) and sweet potatoes (him).

Brussel Sprouts, roasted or in a slaw type salad.
Sauteed asparagus in lemon butter sauce or with hollandaise.
Steamed artichokes.
Creamed spinach or sauteed spinach.
Sauteed squash or baked whole like a baked potato.
Fried eggplant (or roasted).
Steamed, sauteed or roasted broccoli.
Baked tomato halves with parm cheese on top or stuffed with creamed spinach.
Baked tomatoes caprese style.
Corn on the cob any way you like.
Petit pois.
Mustard greens.
Turnip greens.
Turnips gratin.
Green beans wrapped in bacon or fixed stovetop Southern style or pan sauteed.

Thia chile roasted brussels
Mayo chile roasted cauliflower
Green beans (boil 4 minutes then saute in olive oil w/ 2 cloves chopped garlic)
Roasted asparagus w/ olive oil and balsamic vinegar, I need to try sauteing them
Grilled sweet corn, remove from cob, mix with sliced cherry tomatoes, ginger and rice wine vinegar (John Besh recipe)

Seared and sautéed baby bok choy w/ misc. Asian sauces
When I roasted sprouts, I give them a few pulses in the food processor or knife them into shreds before roasting. Makes them a good base for saucy dishes when you don't want the heaviness of potatoes/polenta/etc. I season them well and usually finished with white vinegar or lemon juice or balsamic.
Mexican street corn
Cucumber salad (feta, tomato, herbs, etc.)
Fajita style bell peppers and onions - You don't have to be eating Mexican food for this. Sometimes I skip Mexican type seasoning altogether and do a balsamic version.
Braised greens with lots of pork in them. Hefty glug/splash of vinegar at the end.
Corn maque choux
Boiled baby potatoes turned into a warm potato salad, vinegar based
Misc. veggies on skewers fresh off the grill
When asparagus is in season and really thick, I prefer it steamed with browned garlic butter on top.
Zucchini or squash fritters. Also zucchini or squash casserole.
Savory style mashed sweet potatoes
Corn pudding - the trashy way with jiffy and canned creamed corn
Roasted spaghetti squash with butter, parm, and seasonings mixed in the finished product
Roasted cauliflower of romanesco with toasted nuts, some sort of vinaigrette, fresh parm, etc.

I do a couple quick soups, one being broccoli/cheese and the other being potato/leek. They really don't take that long to cook and could be a nice start to an evening meal.
A simple potato salad is good and goes with many meals.
I love a good salad and often make a big bowl using romaine, cucumber, celery, carrots, tomatoes, salad olives, marinated artichoke hearts and some chopped up fresh sweet basil and parsley.
I also make a very good Caesar Salad using my own homemade dressing and croutons to complete it.
A good homemade Maque Choux is delicious.
In the summer months I will often grill lots of stuff from my garden but I also steam things like fresh okra and green beans and hit that with some olive oil, lemon juice, salt and pepper.
Of course there's fried vegetables and I'll use squash, green beans, okra and eggplant from my garden to cook up a batch----------although my Dr. would prefer I didn't.

My German Grandmother used to take leftover mashed potatoes, combined with left over sausage, add a lot of onions, wrap them in cabbage leaves, cover them with a couple of jars of tomatoes and bake them in the oven. As a kid, I removed the cabbage leaves.
Fast forward 20 years I had a cup of cole slaw from KFC left in the box. Still hungry, I tried it.
My love of this vegetable was born. I probably have some nutritional imbalance, some bizarre relationship between genetics and heritage.
I frequent a local meat and three, that cabbage with a smoked hamhock...delicious.

I hate beets and sweet potatoes so we could probably hang. I don’t have any novel suggestions. I get my green vegetable in leafy salads, asparagus with olive oil and lemon juice, either grilled or sautéed, steamed broccoli (or raw in a salad, or just snacked on, or mixed into stir fry,) and green beans, either in stir fry or sautéed with bacon and onions (which rules).

My mom used to boil new potatoes then melt butter on them and shake some dill on them. I loved that, need to start doing them again

Cauli rice, whipped cream cheese and broccoli, topped with cheese for a broccoli/rice casserole.

And I add to this just a few tablespoons of sour cream, and that the potatoes were on the fire for a few more seconds. This is a very tasty side dish.
