Was coming to post this. Roasted eggplant is also delicious. You can stuff eggplant with many things including making it all veggie if that's what you want.
Eggplant lasagna is also good.

Cabbage, Kielbasa stew.
Carrots, celery, stewed tomato's, cabbage, red pepper, veggie broth, yellow pepper.
It is a good, healthy soup. Some call it the skinny soup as it cleans you out.
I suppose this is similar to the soup on the "cabbage soup diet" or whatever it is?

Absolutely.
I'm a glutton for fried eggplant!

Yes. It cooks up well in my ninja foodie pressure cooker.
For a heart health diet.
The regular cabbage soups don't have the kielbasa. Some add ham, some potato's.

Now I’m hungry for fried eggplant, but I should be eating cajunangelle’s cabbage soup, instead.

Yes. Makes a big batch, and it's very good. I am actually making it this weekend.
I read a Washington Post article about a guy who ate it for lunch every day for several years. The recipe I posted is my slightly adjusted version of the recipe he followed. You can play around with the ingredients.

Fry it with pork skin crumbs if you’re doing low carb.

Vegetable/beef soup--when I make it I use Onion, celery, garlic, bell pepper, zucchini, yellow squash, potato, turnips, cabbage, some leafy greens like kale, Swiss Chard, spinach, peas, carrots, tomatoes, lima beans and snap beans.
Kebabs
Roasted or grilled vegetables
Not so healthy, but delicious---fried vegetables Usually okra, broccoli, cauliflower, eggplant, squash
Stir fry
Pickled vegetable medley--carrots, onions, cauliflower, garlic, peppers, okra, cucumbers

Chicken and Broccoli casserole.
Making this today.
Boil a couple boneless/skinless breasts, cool, then cube
1 cup Fresh or frozen chopped broccoli
1 can cream of chicken soup
1 cup rice (can use the chicken breast broth or water, soup can full)
2 tbl mayo
2 tbl lemon juice
mix all together in a casserole dish, bake at 350 till rice is done. Can add a sprinkle of shredded cheddar on top about 10 mins before finish.

I like to make Chicken Divan. It’s a cheesy (cheddar) chicken and broccoli casserole. It’s fairly easy to make and quite tasty unless you don’t like broccoli.
