What are some lesser known ethnic cuisines?

Just discovered Spanish, Puerto Rican , Peruvian , Indonesian.

I rarely hear people taking about Persian cuisine which is incredible.

Regional Indian food, esp southern Indian, deserves a mention. I’m not talking about the standard Punjabi/tandoori stuff in the average “Indian” joint dominated by butter chicken and korma. I’m talking dosas, idli, and rasam. It’s worth seeking out.

Turkish- coffee with grounds on bottom, burek, manti, meatballs, craft pickles, pomegranate juice, green plums, etc.

Most true family style asian cuisine is completely unknown to the average american. I am not talkinf about pho and bahn mi, moreso, claypot catfish over white rice (ca kho to) or chilled jellyfish, or vietnamese crepe, etc. In general the way seafood is prepared in asian cultures is totally different and often times perceived to be pretty damn unappetizing, but then you get used to it and then you kinda weirdly crave it.

Went to England in the early 80's and they had Indonesian rice bowls that were awesome...had a spicy taste and was really good...reminded me of cajun food...I found food in england otherwise to be very bland..
