Do you self a favor and make actual Hungarian Goulash one day with a chuck roast and quality paprika. It's amazing.

That said, rotisserie chicken leftovers with a fresh chimichurri sauce and some green beans.

InstantPot mushroom risotto with baby spinach, sweet peas and parmesan

Roasted asparagus & yellow squash

Red wine

This is my first time making "risotto" in the IP (thanks for the inspiration, Darla!) and it came out absolutely FANTASTIC. 10/10 will make again.

Crawfish pie is in the oven. I’m posting a before pic, because placing the top crust on was a disaster. We’ll see how it bakes up.

It was the "Little Big Meal" this week at Fresh Market. You could do crab cakes or chicken. Feeds 4 people for $20.

I notice you eat slaw a good bit. I love slaw and have never made it at home for some reason. Do you just do shredded cabbage and some coleslaw dressing?

A fresh ripe sweet honeydew melon.

The whole thing.

Little cracked black pepper and thin sliced prosciutto with a few pieces but it was so ripe and sweet it was hard to do anything to it.

If I’m cooking for others, I make it entirely different but for just the family, it’s a very simple slaw that my Mama made her whole life. Shredded cabbage, yellow onions, salt, black pepper and Mayo. Some wouldn’t approve but we like it. Trying to keep a little green in the diet and mostly leave out the sugars. :)
