Threw some catfish fillets in the oven, opened a can of peas and the last of some slaw. :)

Gyro sandwich from Albasha. Came with feta salad and hummus.

I know it’s very simple to make, but what are the proportions in your cucumber salad? It looks how I like mine to look but that’s not how it looks when I make it at home.

I used half a cucumber.
-Slice the cucumber. Sprinkled some salt on it, let it rest and then squeeze out all the water.
-Mix in 1/2 tablespoon to sugar to 1/2 tablespoon of vinegar. Mix till the sugar dissolves.
-Add the vinegar/sugar solution to cucumber.
It's refreshing, crunchy, salty, sweet, and sour. Its a nice salad by itself.
Next time I'm making it, it will be at least 3 cucumbers.

I hate when we get back to eating healthy most of the time. I also hate the extra LBs I stack on as I age.
So boot camp time. Fresh ground chicken thigh patty, spinach, onion, and bell pepper.
The patty was fire...but would have been better as a burger

Pork roast
Scalloped Sweet Potatos
I made 21 8 oz patties Sunday. Thighs, Breast, little onion, garlic, egg and corn meal as a binder. I froze all of them. Frim frozen they take about 25 to cook in the air fryer.

I tried doing a thigh Brest mix but it was still a little too dry for my likening. I didn’t have the onion or binder tho if that makes a difference. The fam does not love chicken fat on the whole pieces so I trim what I can off and save it in the freezer. So when I ground these thighs I added a little more fat to the mix.

Veggie and beef soup. Added a little sriracha and a lot fresh cracked pepper. When all the veggies and beef were eaten and I was left with broth, I threw a handful of planters cheeseballs in the bowl like they were croutons. Worked pretty well.
