My SO is out out of town, and since he doesn't like Indian food, I took the opportunity to order Indian take-out.

Baingan Bharta
Garlic Naan
Veggie samosas

Served with a side of thunderstorms and vodka waters.

Vegetable Lasagna. Subbed sliced eggplant for pasta. Added shredded pepper jack cheese for some spice.

Looks good Darla. Makes me think of my dad. He always called black eyed peas "lifesavers" I think to poor folks during the depression, they were.

He grew up in rural Alabama until he was 10, then they moved to Hollandale, MS to share crop there. Where they lived in Alabama was red sand country. His dad (my Paternal Grandfather) always said Red Sand Soil is good for growing blackeyed peas and PO-folks.

A sad silly fact. He refused to eat fish, saying when he was a kid, if the family had not had dried blackeyed peas and whatever fish the kids could catch from the Sunflower River, they would have starved. He said when he got to the place in life where he didn't have to eat fish to survive, he preferred to not eat them.

I miss him a lot.

MD I love black eyed peas. My Great Grandpa (passed in 94) always served blacked eyed peas or purple hulls with fresh cut Smothered mustard greens every Sunday lunch. Great Grandma made the pot roast and pickled beets. Grandma baked the fresh rolls.

I have eaten lots of them. We are doing keto at the moment and not eating carbs - Black eyed peas are full of them, so they are a no-no at the moment, but we have dried BE Peas in the pantry and will have them again, just not right now.

Dad liked to say if you had Blackeyed Peas and Cornbread, you could plow all day long.

My grandfather was the same way with chicken.
