My dad used to occasionally pan fry hearts and gizzards or add to gumbo. Was always a treat.

I made spaghetti with just hearts and gizzards today. Browned them then let simmer for awhile in the sauce. It was OK at best. I wish I had used thighs like I originally planned to. Doubt I'll even finish what I made. I think some of my coonassness has gone away.

Smash burgers and griddle fried potatoes.

There really is no better way to make a burger than a griddle.

This afternoon even though it's been as hot as it has been this week I threw together a pot of chili for dinner.



Also since we had no saltine crackers here I decided to make a pan of cornbread muffins.



Half of them had slices of sweet & hot jalapenos.



About time to eat! I had mine with a dollop of sour cream and fresh shredded cheddar cheese.





Oh BTW, this was the first time I really used the larger pot of a three piece set of HexClad Hybrid cookware. HexClad

I really like how they cook! I foresee the wok appearing here soon.

I made a burger sauce which was equal parts light mayo( )/ketchup/mustard/chopped pickles. And Tony’s.

I made a Tasso roast with a red gravy Over rice. Had a little salad to go along with it.

It was! I’ve been perfecting my low cal burger so I can eat them anytime I want and I think this was the winner.

Simple ham and cheese sandwich made with the ham I cooked Sunday. With a little slaw. :)
