Giant pot of chicken and andouille gumbo

ETA: OH GOD, I HAVE SEVERELY MISCALCULATED. I started too late. It's almost midnight and the stuff's still at 170 degrees. I moved it into more smaller pots, but I need it down to 150 so I can put the cooling paddles and ice bath to it. I'm gonna be up all night getting this stuff cooled down and put away.

Fresh ground ribeye burgers, sous vide and then sear in a cast iron at 450 butter basted. Everyone other than me likes med well so that’s what I did and it was really good. I’d like it more med. Crust was awesome.

First of the season. It has been such a day of food that I’m surprised I even ate these, but that first taste of the year is unmatched.
