The oven roux was so easy! It was lengthy because I did a lot, but it was so simple, and I was able to have everything else entirely ready when it was done.

Still think I should haven gone darker, but it definitely was a winner.

I think you have to make it at least once before you get the feel for how dark you can go similar to making it on the stove, but it doesn't get any easier than in the oven for a good sized roux which has the exact same flavor as on the stove. The oven is easier to me than stirring a 15 minute roux even if you make it very quickly over high heat. No timing worries. It's not going to burn if you go one more second like stovetop can.

I'm at a Burmese restaurant in San Francisco called Mingalaba. Eating tea leaf salad, catfish chowder and green beans. Ginger lemonade is delicious!
