These low carb ramen noodles make me happy! This flavor is Tom Yum Shrimp. It doesn’t come with shrimp, however. 5 net carbs for the ramen and seasoning packet.

Their focus is on healthier instant ramen, so it’s nutrient dense, plant based, lower sodium, etc. My main interest is that they’re low carb. Pricey, too, but I’m getting them anyway! Like $6.25 a packet.
The noodles are firmer and chewier than regular noodles, but I like them. This is the second flavor I’ve tried. Yesterday for lunch I had the beef flavor. It wasn’t brothy enough for me, so I added a little chicken stock tonight so I could have enough to slurp!

Jones is 40 today, and we close on what we hope to be our forever home tomorrow. Several great things planned into the weekend to celebrate those things.
