Red Beans and Rice with Andouille from Maxwells. The Beans creamed well, spices were perfect, but the andouille was different. Too weiner tasting. Gonna check out Bergerons' here in Bossier next time and see how they compare.

Maxwell's has been great for 10 years but they may be slipping and they are too far away unless they have terrific stuff.

Found in the freezer :

Thin cut bone-in pork chops
2 links andouille sausage
1/2 yellow onion

I can work with that.

Also have all the ingredients for a pone of cornbread.

Picked up an ice chest of seafood at Joe Patties. She'll have the choice of fresh yellowfin, snapper, mahi, grouper, or flounder. Also got a gallon of oysters. I bet it's seared tuna and chargrilled oysters.

Muffin tins. It's a helluva lot easier. And really the end result is about as good. Just not as cool and authentic like.
