I’m having nachos and maybe some Mac and cheese later on (it’s closer to lunchtime here on my coast). I made some vegan cheese sauce that I learned from a friend of mine working at her restaurant... all plant based, no dairy no soy

I know most of you won’t care, but it’s delicious. Good way to sneak in veggies if your kid is a picky eater.

I used 4 small gold potatoes, a yellow onion, 1.5 carrots, 1/3 cup of cashews... put it all in a pot with about an inch of water over the top. Cooked it down for 40 minutes (until cashews are soft enough to blend easily.. you can also pre-soak these) with salt, garlic powder, mustard powder, turmeric, nutritional yeast and black pepper. When it was done I added more salt and some lime juice. Blended until smooth and then season more if necessary

It’s hard to describe. The garlic, salt and lime juice do a lot of the flavoring. More lime = sharper type cheese. It does really well on nachos and mac. Or on hot dogs, chili cheese type things.

I think it looks good. I'd eat it.

I'm doing butternut squash mac and cheese tomorrow, but it will have some cottage cheese and some shredded gruyere.

I would definitely try it. Sounds a lot healthier than my version of nachos!

We are going simple tonight. Probably a bowl of cereal after a huge lunch.

It looks good, but I'd honestly rather just have cheese than a bunch of potatoes.

As someone who just had cauliflower as rice, I commend you on your vegetables, cashews and extras as cheese.
