Awhile back Tom was telling Mary Ann about a dinner he had and she asked him if it was prix fixe. He said, 'no, they made it when I ordered it'. Only sponsors are Andrea's and N.O. Hamburger and Seafood. Mary Ann takes Fridays off and leaves the Annoying Oyster Lady to take care of Tom. The show is an embarrassment.

One of many alters. He even has transgendered ones, so that tells you how weird he is IRL. His/her stalking skills on the OT are on point.

My ciao number is 425 which I got probably late 1980’s. I’ve attended 4 Eat Club dinners although not in the last 15 or so years-one attended by Carl the Gourmet Truckdriver, I make root beer glaze for my ham and use his brine recipe. I even made Pong with red cream soda but I don’t remember exactly how.

My guess is I’ve listened to the guy longer than you and drank several outstanding wines with him.

So don’t you have a J Peterman tour that needs tending to junior?

I’m starting to think Paul Allen is Mary Ann and TulaneLSU is Tom Fitz.

Tom Fitz also openly advocates against new food trends coming to New Orleans.

Unless said new establishment sponsors his show. Then, it becomes one of his favorite new places to go.

Reposting here because the other thread is anchored:

I listened to his show for about 45 minutes yesterday. It's the first time in a couple of years, I think.

His demotion to HD2 has cost him a gigantic portion of his listeners, his dementia has cost him some more, and he gets almost no callers presently. The calls were what kept the show new and interesting. They've filled in with guide dog Mary Ann and guests who people care nothing about. Then there's the solar magnitude issue of his arrogance, pomposity and rudeness.

Tom has been a great resource over the years. He had pretty comprehensive knowledge of the history of the NOLA food scene. But he resisted new food trends, choosing to ignore them instead of continuing to follow the trends. For example, he refused to learn anything about the revolutionary segment of craft beers.

A couple of you guys (you know who you are) can continue your worship, but his time has passed.

I've never forgiven him for a crap article he got published in the Washington Post in the aftermath of Katrina. IIRC, it was a Thanksgiving piece, in which he talked about not being able to get his hands on sugarcane to follow his usual recipe for smoking (something--I can't remember if it was turkey or not). He wrote that it was wholly unavailable, due to the entire crop being decimated by the hurricane. It was absolute hogwash. Sure, plenty of cane was damaged, but there was definitely a harvest underway at the time of his writing. I actually called him out on it, and his lame-arse response was "well, that's what the farmer I talked to told me." Again, clearly a fabrication, as no cane farmer would have declared a 100% harvest loss. When I read the lines, I was actually within sight of a cane field being harvested....less than 20 mi from Orleans Parish.

His hyperbole was exactly the wrong kind of post-Katrina message to share with the world. And his refusal to admit that he exaggerated and had NO legitimate, attributable source for his alleged fact compounded the offense.

So he's been in the realm of (eyeroll, whatever) for at least 15 years now. Don't get me started on the time he claimed that "All Vietnamese food is a variation of pho"....

Time for that old horse to be turned out into the pasture.

Agree with each of the negative comments about him posted here, but nonetheless I will be sorry to see him leave the scene. No one else is going to take his place by going on the air nearly every day and writing (or often retreading) reviews of restaurants and food related articles each day.

Id almost forgotten about that ridiculous stance. As if most cuisines of the world arent based on a handful of staples and ingredients which are derivative into multiple dishes.

Its sad but I remember reading about the last few years of James Beard, Craig Claiborne , and a few other of the first wave of restaurant reporters and how they all sort of lost their marbles and became grumpy, malcontents. IIRC, this was in the Untied States of Arugula.

Isn't it just that and sweetened condensed milk, in an icecream machine?

It's not bad, but it's REALLY REALLY sweet.

I listened to the segment from yesterday afternoon with the GM of True Food Kitchen. Fitzmorris's wife is absolutely unbearable.

This guy is basically explaining that their concept is not trying to make healthy gumbo and jambalaya, but something NOLA hasn't seen. She just keeps basically slamming him for not being a New Orleans restaurant. She was quite cringeworthy.

I didn't do mine in an ice cream machine. Seems like it was added to the 2 liter bottle and put in freezer and shook every hour or so?

Gris Gris what was his argument about the U-Boat at the mouth of the Miss River? I don't remember it but he was arguing with I think Bam Bam. He was funny as hell on his old message board because he just never got the humor. The sarcasm he played right into.

I'm sorry to hear he's hiding his own Easter eggs.

Some of those ppl were plain 'ol nuts; but the overall level of food knowledge among regular contributors was pretty high. Food writers, local chefs & industry people, excellent home cooks, wine snobs....it was a whole different era of the internet.

"The runaway success of Shaya, the Israeli restaurant from Chefs John Besh and Alon Shaya, was such that when the two men broke away from one another, it left a vacuum. When the handsome Kenton's restaurant shut down despite its very good Southern style and Magazine Street address, Besh took advantage of the opening."

What will we do without this insight?
