Fresh poboy bread, skinnier than French bread, closer to a baguette, if toasted properly, is crusty and fragrant on the outside, softer and yeasty on the inside.
I bake a lot of my own bread, I've never been able to get the light, airy crust and crumb of poboy bread. White bread buns, common in BR, have none of these qualities, it's just a plain, tasteless, white bread bun. The best thing you can say about it is that it is cheap.
BTW, I didn't find the portions small at Phil's, the "poboy" came with a mess of onion ring. However the onion rings seem to be the pre-frozen variety, not positive, but pretty sure.

Somebody always post this. I didn't care for their roast beef Po boy. Also their crawfish was fine but their seasoning isn't my favorite. I prefer Tony's crawfish.

You might not have liked it, but Capital City Crawfish has the best RB poboy in BR. There simply are no places that make them well; 90% used sliced deli meat. Jasmines on the Bayou makes a decent one if I remember correctly.

It was the actual roast beef that I thought was sub-par. Just because a couple fan boys on this site say they're the best in Baton Rouge doesn't make that true.

I just love how so many of you folks from Baton Rouge can just take the liberty to tell someone what kind of bread a po-boy should or shouldn't be on, and it's no big deal ... "New Orleans folks should get over themselves."
But let someone put something in jambalaya,gumbo,or etouffee that you deem "out of order" ... blasphemous.
If Leidenheimer bread is tough and chewy, and you have trouble pulling it apart ... it's not fresh. It wasn't baked that morning, and that's a fact. If it was in a plastic bag prior to being used ... it wasn't freshly baked that morning. Leidenheimer bread baked fresh that morning is delivered in a giant paper bag ( it's intended to be used that day and not be kept for another day.) Most of the places in BR that do get Leidenheimer don't get it daily, so it's kept in plastic bags. Not the same. That's when you get the chewy crap that some of you so rightfully complain about.

I've had it about as fresh as it gets. If I wanted to chew on bread for 5 minutes I'll go to Jimmy Johns

LeBlanc's and Rouses as well as Rocco's and Acme get it delivered in the big bags daily. I bought one the other day at LeBlancs and made a great pot roast po boy which i prefer. I'm sure others get it, I just don't eat that many po boys anymore to keep up. And you are right, it has to be fresh and when it is it is incredible bread and I prefer it over a softer bread.
But because some places here sell soft bread, as do many in New Orleans, people are deemed to have "immature palates" is fricking stupid. To think because someone grew up or lived, lives in New Orleans makes them an elitist connoisseur superior to anyone else - specifically Baton Rouge is laughable. I have as many friends from NO that could give a shite about much more than Olive Garden as I do BR friends of the same. If Phils sucks than it sucks and it won't last long because even these immature palates won't keep patronizing it.
