I'm not big on goat cheese either but my 89 year old MawMaw made this exact recipe for Christmas and it was awesome! She thought it was a little labor intensive for her but again she is 89 and wheelchair bound but the end result was incredible.

I eat roasted cauliflower almost once a week. I love it! I may try this another night when I have a little more time to do it

I roast cauliflower and/or broccoli when we have steak with blue cheese sauce since I am not a big meat eater.

Try this to recreate a pizza oven in a home oven. And its how I cook the cauliflower.
Position rack about 6 inches from broiler plate. Fire oven up to 550 for 45 minutes. Switch to broiler for 10 minutes. Slide in cauliflower and cook til brown. A baking steel really helps as well, but not necessary for this application.

I made this a couple weeks ago. Damn tasty. For the whipped cheese, I just used some blue cheese & whipping cream I had on hand.

Made this last night. Followed the recipe exactly for the basting liquid. Put the cauliflower on my Primo at 450 for approx 25 min. Modified the cheese spread to just feta and goat with olive oil. Damn tasty. I have another roasted cauliflower recipe that I've used frequently in the past, which is a little easier: preheat over to 375. Make a herbed butter with 4 tbsp unsalted butter, 1 glove minced garlic, 1 tpsb chopped dill, 1 tsp lemon zest and 1 tsp grnd cumin. Remove leaves from cauliflower and spread herbed butter over top. Place in a casserole dish and cover with alum foil. Bake for 1hr, 15 min. Comes out damn good this way, too.

Did this tonight. I followed it to the "T" until I realized we were out of feta. I used cream cheese, goat cheese, Greek yogurt and a drizzle of balsamic vinig. Came out great. My wife thinks I'm kinda fancy.

I roasted a head of cauliflower on the grill for Thanksgiving last year. Drizzled with a balsamic vinaigrette and threw on a few capers and parmesan shavings. Prettier than the turkey!

Sure is. And as good as Alon's roasted cauliflower is, a cauliflower gratin is still tops.

One further comment... after you simmer the cauliflower you're left with a LOT of broth that seems a shame to waste.

Rex I saved mine and cooked another head a few days later then poached some salmon in it. Turned out really well. You could freeze it if necessary.
