I want my hot sauce to add a little spice, not just have the flavor of hot sauce.

I'll suggest Clancy's Fancy, then.

It's a Yankee concoction (from Ann Arbor, no less) but it's pretty damn good, and more complex than most hot sauces.

I'm with ya. Can't beat Tabasco on red beans. The vinegar enhances the flavors

Haven't had Valentina's, but agree with you about Sriracha. That stuff is awesome and by far the best I've had.

For Louisiana hot sauces I go Louisiana>Crystal>Tabasco.

I cant taste the difference. If you cook your own food the right way you shouldn't need it anyway.

I like Sriracha, except I prefer to cook with it.

Putting it on at the last second is a bit overpowering to rice or bread based dishes.

True. And I also prefer Tabasco when I mix it with ranch, for chicken tenders, wings, fries. etc when i'm drunk and fat.

They're all great but for different stuff.

Tabasco---> red beans, gumbo, étouffée (rice based foods)

Louisiana--->pizza, poboy, burrito (bread based foods)

My Totino's pizza has Louisiana hot sauce, sriacha, and jalapenos. Best combo of spice and flavor.

Crystal in Gumbo along with some chow chow. Tabasco on fried stuff and pizza. Louisiana in rice and gravy and beans. I find Louisiana has the least amount of vinegar.
