Suggest some knives

I have had a Henkels block set for years and their pretty shitty.

I am throwing them away. I know enough to not buy another set and just get a couple individual knives.

What type of knife should I get and best bang for the buck? I'm not a chef and not looking to spend hundreds on knives. I cook maybe 2-3 times a week for 2 people. Mostly basic recipes.

I wouldn't throw them away. Just get them sharpened and they should be fine to use as an everyday/don't care about set.

Shun makes great knives. Maybe not the absolute best for your buck but they're extremely reliable and hold up well.

Victorinox. You can spend more for better knives. You can also spend more for worse knives. My Victorinox 8" chef's knife is my workhorse and has been for a decade (with occasional sharpening on a whetstone, of course).

I agree if you have not sharpened them it will bring them back to life. They may not hold a edge as long as a better knife but a sharp knife is a sharp knife IMO.

My most important is the chef knife. I use a curved boning a lot. I also like having a long scalloped slicing. I’d say those are my top 3 but when they are dull they suck.

With that said I do want to get a nice chefs knife and start doing some proper sharpening. I have a 3 stage electric sharpener that works ok but I know I can get them sharper, I just haven't tried.

Victorinox Boning Knife

This is by far my favorite knife I own. Very sharp and very easy to use for cleaning pieces of meat.

This and Dexter Russel. My favorite knife currently I bought from Ace Hardware for like $10. Crappy handle but fits well and the blade is great.

If you are in New Orleans, I believe there is a place on Oak St. off of Carrolton that sharpens knives.

Seriously, the Skylight brand on Amazon is legit. Probably one of the sharpest and well-balanced knives I own. I use this bird's beak paring knife on a daily basis.

Yeah, I have either the 4 star or 5 star. We got them for our wedding in 2004. Those things are still going strong.

Some fabric supply stores such as hancock fabrics and joanns will sharpen knives and scissors.

Shun Classic series won’t break the bank and are nice, may just have a composite handle instead of wood. I second everyone’s suggestions on Victorinox. I have really been enjoying my Enso knives, nakiri and vegetable cleaver. If you really are not worried about aesthetics, get you 3-4 Victorinox knives and a Yaxell or Minosharo 3 stone pull through sharpener and you’ll be good for a long time.

Ive had a set of Henckels Classic for over 20 years and they are every bit as good as the day I bought them. I added a Santoku and paring knife later that weren't part of the set
