Here's the birria tacos I made for said fiesta
Seasoned a chuck roast with meat church holy gospel and meat church voodoo. Smoked it for a while then put in the birria consume that I made the night before and let it cook down all day in the smoker.
At the fiesta, I took flour tortillas and dipped them in the consume and put them on the griddle. Followed by oaxaca and chihuahua cheese. Added the shredded chuck roast and continued to cook on the griddle.
Added some cotija as I pulled them off and placed in the pan. The pic of them in the pan isnt the most flattering due to them having been in there for a bit, but Trout Bandit can be quoted as saying "Dont tell NfamousPanda, but these are the best food here tonight"

Those look good in the picture with the pit and sauce in it. I think you should use that picture as your last picture on the post for the voting thread.

You're not really removed in entirety though. Any vote for Mad Dogg will, ostensibly anyway, be a partial vote for you.
