I think I went from mid rare to medium tonight. Not sure the reason it seems better when i over cook it. I think ita a sign I've passed 40.

Quality of meat doesn't change my aging tastebuds.

129. With a nice sear. Sous vide is great for steak.

What's your cooking method? That has the sound of your not being able to hit a balance of center temp while still getting a good Maillard reaction/crust.

I like my ribeye medium because more cook to the fat. I like a filet and sirloin medium rare. Maybe I'm weird.

Also the quality of beef... From my understanding the waygu super expensive stuff you are supposed to cook to medium because all the fat renders and it becomes buttery

Medium rare. I'd much prefer it be closer to the rare side than the medium rare.

Medium is, at least, an acceptable option for others. Anything past that and you might as well eat a burger.

I was a bit too harsh with the MIL one time in refusing to cook hers well done. I'm older now, it's her food if she wants it that way.
