Steak Marinade Question

Currently have some steaks marinading. Got thrown a curve and now the steaks are out. I know I can’t leave them in the marinade as they will get over powered and salty. What do I do with them?

My initial thought is to pull them from the marinade and put them in another freezer bag and either refrigerate or freeze. Will this work?

I've never understood the fascination with using a marinade on a good cut of meat like most steaks.

It's as bad as slathering on A-1 Steak Sauce after it is cooked and ready to eat. Why cover up the great taste of a grilled steak with a bunch of other flavors?

Pull them out of the marinade and re-bag. Freeze if you want, and use for fajitas.

Once they are frozen, they wont be very good as a "steak" but thin sliced fajitas will be fine.

I see this a lot. My general go to is sea salt and fresh cracked black and white pepper. While good, it's not always the best. In this case the marinade was a couple of tablespoons of Dale's, olive oil, and some Montreal Steak seasoning. The main ingredient by volume being the olive oil which is just a medium for the other two flavor components. A far cry from drowning something in Italian dressing. The concern was the level of salt.

I've removed the steaks from the ziplocks and put them in new ones. I'll be curious to see how they do.

You're going to get blasted on this board for using anything other than salt and pepper but there isn't anything wrong with some Montreal steak seasoning in my opinion.

I've always avoided things like this due to the prejudice you mentioned. A couple of weeks ago I used some as directed on some thick cut pork chops I had just as something different. It was terrific.

I used the same method on some steaks last week and they were great. Much better than my standard salt/pepper. I was trying it again last night when something came up and I had to abort on the steaks.

Because sometimes you have a craving for some steak with A1 on it? My steaks are almost always just salt and pepper, but sometimes you want something different.

The "shaming" (not your post necessarily) for going against the norm around here keeps more people from posting IMO.

ETA: As for OP, pulling them from the marinade and cooking in the next night or two would be ideal if it was me.

Before you grill them or cook them in cast iron, dry them off really well and then brush each side with a bit of bacon fat. Been doing that with steaks and burgers.

Screw the opinions of this board. You do your steaks however you want them. When another poster buys you a steak and cooks it for, then they can have an opinion on your food.

Brookshires in Monroe had USDA Select Beef Tenderloins on for $6.99/lb this past Friday. I bought one, cubed half of it up and marinaded the chunks in good ole Wishbone Italian and Soy sauce for 3-4 hours. From there they went on kabobs with various peppers, onions and mushrooms and grilled medium rare. Turned out really good. So yesterday I marinaded the other half of tendloin in the same thing. After a few hours I dried it off, seasoned it a little bit and reverse seared it. It was good too, especially for $6.99/lb beef.


TLDR- I marinated beef tenderloin in Soy and Italian and enjoyed it.

In the past in my inexperienced days, I used Dale's. It is nothing but salt, and a LOT of it.

Montreal Steak Seasoning is not a marinade - it's a rub. It is hands down the best thing to put on a steak.

The recommendation on the side of my Montreal Steak Seasoning calls for: 1/4 cup olive oil, 2 tbs Soy sauce (I sub'd Dale's), and 2 tsp seasoning.

I like steak rub on a steak, but the best I've every had was some local dude back in Alabama. Not sure what's all in it, but it was so much better than anything else I've tried.

Some of the normal seasonings, also had molassis in it. My parents gave it to me since they weren't using it. They didn't remember where they got it from....
