All a good steak needs is kosher salt and fresh cracked black pepper. Reverse sear until mid rare, rest 10 minutes, and a quick sear on each side in a black iron skillet. Enjoy!

I don't marinade steaks but do enjoy a solid sauce with a good steak. My favorites both go with filet mignon, either a nice bernaise or a shallot/red wine/balsamic reduction. Both pair extremely well with beef and, imo, highlight the beef more than drown it out.

Update:

Pulled the two steaks out of the freezer this weekend. They were fantastic. I was concerned about it being too salty or possible a little hammy. Neither happened.
