Speckled trout filets in baton rouge

Anyone know where I can source these? Lady at Tony’s says they have the whole fish, and they can filet them for me. I think I’d be paying for a lot of waste if I did it this way.
Any other sources for fresh seafood?

Right. Any place you are buying just filets is going to be doing this.
Buying the whole fresh fish and letting the fishmonger filet it (if you don't want to do it yourself) will almost always be the best bet for both price AND quality/freshness.
Not sure what else you'd be looking for better.

I can 100% promise you that you are paying the same for dressed filets either way. Go look at the price of a whole chicken vs boneless breasts

I am surprised you can buy them anywhere. Also i don't trust that what is advertised is what you get...more when it comes to restaurants. I had a friend order what he thought was speckled trout but I can assure you it wasn't

The trout you see in Rouses and suck come from South Carolina I believe. They are not Louisiana trout.

I get fish at Tony’s occasionally. It’s amazing how good those Asian women can filet a fish. Yes, the price for filets are way more than the price for whole.

So just get it and filet it yourself.
But, my experience with Tony’s is that they actually do a really good job when you ask them to filet.

HEB was selling them. Head on over to Beaumont, TX and pick up a bunch and sale to these baws on TD.com.

I saw speckled trout filets in Calandro's on Government on Saturday. I was surprised, because I didn't think you could sell sports fish in Louisiana. Maybe from out of state, but I have no verification.

There’s no part of a trout you eat other than filet’s OP, so the filet and whole fish price is adjusted appropriately. It will be something like $4.99/ lb whole or $9.99/ lb filet. You aren’t wasting anything.
Many places sell fish ‘whole’ and filet for free. Very common practice. Some fish like grouper and red snapper there are other parts like cheeks and throats you can sell and eat also. Trout are not like this.

They can be fished commercial in North Carolina and Mississippi. That's where most of them are from when you see them sold in seafood market or restaurant.

I ask for the frames when doing that. Sometimes there is a decent amount of meat between the bones... nice cook's treat when frying for a crowd.

There are rod and reel permits for catching specks in Louisiana commercially. Gillnets have long been banned but there are plenty people licensed to catch and sell specks in Louisiana.
