This.
And what are the ingredients and amounts you used?

I let it go for about an hour and a half total at about 225-230 degrees. At about the halfway point I stirred it all up together and stirred another couple of times until finished.
It definitely has a smoke flavor but I wouldn't say it is overbearing.
32 ounce block of velveeta
1 jalapeno sliced
1/2 vidalia onion, sliced
1 can of original rotel
1 can of fire roasted rotel
1 lb of jimmy dean hot sausage, browned and drained
1 can cream of mushroom
I didn't add the cream of mushroom until I started stirring it all together in the smoker.
If I had a head of garlic I would have smoked a few cloves whole, mashed with a fork, and then stirred them in too.

Looks great.
Did it need the soup? I ask because I've never used in rotel dip.

It's essentially smoking while trying to keep the cheese below its melting point (approx. 90 degrees)
There a different tips, tricks, and methods depending on what you're smoking set up is. I've done it on my masterbuilt electric smoker
I've got a buddy who's done it with the AMAZN pellet smoker
just google "cold smoke cheese" and your apparatus for recipe ideas

That looks amazing.
I just picked up some fresh peppers from a friend yesterday and my wife said this weekend that she was in the mood for some queso. I guess I have to make this tonight.

Probably doesn't need it but I like the flavor it added. I've never used it rotel dip either but had a can in the pantry so decided to give it a try.

I like Matt Pitman too
Matt Pitman is awesome but I didn't see this from him. I picked up the idea from an Oklahoma Joe group on Facebook. Maybe that person got the idea from Matt Pitman.
